Four-Ingredient Chocolate Mint Cookies

Method

Step 1

Grease and line two large oven trays with baking paper.

Step 2

Place cake mix in a large bowl, reserving frosting for another use. Stir in egg and butter. Add chocolate. Stir until evenly combined.

Step 3

Roll level tablespoons of mixture into balls. Place about 4cm apart on prepared trays.

Step 4

Cook in a moderate oven (180C) for about 18 minutes, or until lightly browned. Remove. Stand on trays for 15 minutes until firm. Transfer to wire racks to cool completely.

TIP: Store cookies in an airtight container for up to one week. Replace chocolate with peppermint or Caramello chocolate.
