TIP: Make sure the beetroot is drained on absorbent kitchen paper before using.

To make patties, place beans in a large bowl. Lightly crush with a fork. Add beetroot, onions, carrot, feta, flour and seasoning. Toss to coat. Add eggs. Season with salt and pepper. Mix well.
Heat enough oil in a large, non-stick frying pan, to shallow-fry over a medium heat.
Spoon 1/3 cup beetroot mixture into pan. Spread gently into a 10cm round. Repeat to make three more patties.
Cook for about 4 minutes on each side, or until golden brown. Transfer to an oven tray lined with baking paper. Place in a very slow oven (120C) to keep warm. Repeat with remaining mixture to make 12 patties.
Meanwhile, place rolls, cut-side up, on a separate oven tray. Cover with foil.
Heat in same very slow oven (120C) for about 3 to 5 minutes, or until lightly toasted.
To serve, top cut-side of each roll half with lettuce, two patties, tzatziki and sprouts.
