But have you ever thought to try it as a brownie? Well one clever Instagram baker has done just that, and she’s topped it off with cream cheese icing, of course! Yum!
She shared the easy recipe to her social media page FitWaffle Kitchen and the post has since gone viral with 85k likes and counting.
Give it a go yourself and here’s a tip if you struggle with keeping your icing lump-free; try softening the butter in 10-second intervals in the microwave then slowing mixing the icing sugar in.
Ingredients
170g unsalted butter, melted260g granulated sugar1 large egg + 1 egg yolk1 tsp vanilla extractRed food colouring200g plain flour10g cocoa powder1/2 tsp lemon juice90g white choc chips
Cream cheese icing115g butter, softened225g cream cheese1 tsp vanilla500g icing sugar
Method
1. Whisk the melted butter with granulated sugar, then add the egg, egg yolk, vanilla extract, and the red food colouring.2. Add plain flour and cocoa powder and fold into the mix.3. Stir in a teaspoon of lemon juice, then add the white chocolate chips, folding them into the mixture to ensure they’re spread throughout.4. Spoon the mixture into a 8″ x 8″ baking tray lined with parchment paper and bake for 27-32 minutes at 160 Celsius. Then leave to cool. 5. To make the icing, whisk butter and cream cheese together before adding vanilla extract and icing sugar, gradually through a sieve, until fully combined.
